Cheap & Cheerful Summertime Snacks!

Well hello there!

I can't believe it's already the end of July! The summer always seems to fly by us doesn't it? Why is that!?

I don't know about you guys, but it just dawned on me that I spend way less money on food in the summertime-- mostly because I don't dine out nearly as much as I do in the winter. Of course it's great to sit back and relax on a patio once in a while, but we don't really need extravagant summer meals to get us by. For me, I'm already so excited to be rid of the snow and welcome the sun, that I'm generally pretty content with whatever I choose to eat.

Below is a list of some quick and cheap meals that get me by in between splurging at the patio. All of these are also vegetarian-friendly!

TOASTED TOMATO SANDWICH
What you need: Bread, Tomato, Mayo
Add-ons: Bacon, Lettuce (BLT), Cheese, Pickles (Mmm)

CORN ON THE COB
What you need: Corn, Butter, S&P

GRILLED CHEESE SANDWICH
Or as my little brother used to call it, "A girl cheese."
What you need
: Bread, Butter, Cheese
Add-ons: Bacon, Ham, Tomato, Pickles

STIR-FRY
What you need: Various Veggies,
Soy Sauce, Noodles or Rice
Add-ons: Chicken, Shrimp

PASTA SALAD (Many Recipes, All Easy!)
STANDARD: Cold Noodles, Tuna, Mayo, Onions, Celery
GREEK: Cold Noodles, Dressing, Feta, Olives, Tomatoes, Onions

PIZZA BITES / PIZZA SUB
What you need: Bun, Tomato Paste,
Cheese (Jalapeño Havarti Mmm)
Add-ons: Whatever you want!

BREAKFAST FOR DINNER
What you need: Eggs, Bread, Potatoes
Add-ons: Bacon, whatever!

CHEAP DESSERT
Popsicles
Ice Cream (on sale!)


I think we underestimate the happiness a simple popsicle can bring us in the heat of the summer! And PC makes real juice popsicles that are better for you than just sugar & water, and they're awesome!
